Keto Stir Fry
Ingredients:
2-3 tbsp of arrowroot powder
¼ cup coconut sugar or xylitol- for no sugar
¼ tsp ground ginger or thumb size of fresh ginger chopped
3-4 cloves garlic minced, or 1 TBSP garlic powder
½ cup BRAGGS Liquid Aminos
¼ TBSP apple cider vinegar
½ cup water
1 ½ cup vegetable, chicken stock or bone broth—read labels!
Handful of fresh chopped basil
Optional- red pepper flakes for some kick
4 chicken breasts sliced (you can use beef as well)
2-3 TBSP coconut oil for frying
Favorite vegetables of your choice (mine are noted below)
Garnish with fresh cilantro
Directions:
Combine all ingredients in a jar with a lid and shake well. Shake before using. To use your sauce: Stir fry your chicken breasts in 2 TBSP of coconut oil and then add the vegetables of your choice and fry until your texture is achieved. (I like green beans, broccoli, bell peppers, mushroom, and onions). Add appropriate amount of sauce for your liking. Bring to boil for about 1 minute or until thickness has been achieved. You may add more arrowroot powder if you want it thicker. When it is served I like to add fresh cilantro to my dish. You can serve with quinoa or brown rice, or just eat a big bowl of veggies and chicken.
