Ginger Glazed Mahi-Mahi

Here is a great recipe to increase your good Omega 3 fats, selenium, vitamin B5, vitamin B6 and potassium consumption. This ginger glazed mahi-mahi recipe is packed with nutrition.  In case you didn't know Mahi-Mahi contains approximately 32 grams of protein per 6 ounce serving.  Another reason why I like to add the ginger glazed mahi-mahi recipe to my nutritional protocol is due to its low mercury content. Always consider the mercury content of fish before purchasing. Healthy wild caught fish can be loaded with many vitamins, mineral but high amounts of mercury can also be found it you are not careful.  Mahi-mahi is loaded with over 60 micrograms of selenium.  Selenium is necessary for the conversion of T4 (inactive thyroid hormone) to T3 (active thyroid hormone).  A 6 ounce serving of this ginger glazed mahi-mahi contains enough selenium to meet your daily requirement. Ginger Glazed Mahi-Mahi

 

Ingredients:

3 TBSP honey or xylitol

3 TBSP Braggs liquid aminos

3 TBSP balsamic vinegar

1 tsp grated fresh ginger root

1-2 cloves of garlic, crushed

2 tsp olive oil

4 (6 ounces) wild-caught mahi-mahi fillets

salt and pepper to taste

2 tbsp butter

fresh lemon slices

 

Directions:

In a shallow glass dish, stir together the honey, Braggs, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.  Heat the butter in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. You may also grill the fish.  Remove fillets to a serving platter and keep warm.

Pour reserved marinade into the skillet, and boil over high heat until the mixture reduces to a glaze consistency. Spoon the glaze over fish, add a fresh lemon slice and serve with your favorite salad or roasted veggies.
