Fat-Burning Energy “Bombs”

  • 1 cup raw almonds
  • 2 cups unsweetened coconut flakes (raw is best, read the label for added sugar)
  • ½ cup chocolate protein powder (Raw grass-fed is best or vegetarian)
  • 4 TBSP unsweetened cocoa powder
  • ¼ cup xylitol (you can substitute honey, stevia or no sweetener at all)
  • 6 TBSP warmed coconut oil
  • 2 TBSP ground flax meal (or just blend flax seeds into “meal”)
Directions: In a Vitamix or blender, first blend the almonds and then add in the remaining ingredients. If it seems too thick, you can add in a little more melted coconut oil. Remove the mixture from the blender and drop tablespoon-sized servings onto a cookie sheet and chill in the refrigerator until they become firm. It’s best to store these in the refrigerator as otherwise the coconut oil will melt and you will have a (delicious) chocolate mess on your hands.
