Salmon is by far the best fish you can consume, so I created the best salmon cake recipe ever to make it easy to get your weekly salmon consumption. Today getting more omega 3 fatty acids in your diet is more important than ever.  Fresh wild caught salmon is one of the healthiest foods that you can consume. Salmon not only contains healthy omega 3 fats, choline, vitamin d, selenium but also the antioxidant astaxanthin.  Other benefits included vitamin b-12, protein, potassium and niacin.  Salmon can be enjoyed so many different ways hopefully this recipe gives you another way to enjoy this nutrient rich superfood!

Beware that Atlantic salmon is toxic due to the more polluted waters. So my personal favorite to eat is Alaskan with the best tasting being Copper River Sockeye. The Copper River produces some of the best salmon in the world and that is why it is hard to come by, so when you find it do yourself a favor and buy it!  What a treat.  If you do get Copper River Salmon please don’t turn it into the best salmon cake recipe ever, prepare the “King” this way.

The Best Salmon Cake Recipe Ever

Ingredients:

1 15oz can of wild caught Alaskan salmon or fresh is always best

1 cup almond flour

2 organic free range eggs

½ cup chopped onion or 1 TBSP onion powder

1 TBSP dried parsley, dried dill weed and garlic powder

½ tsp black pepper

¼ tsp sea salt

2 TBSP coconut oil for frying.  Learn more about the benefits of coconut oil.

For the garnish: dried dill weed, freshly squeezed lemon juice, and a drizzle of balsamic vinegar

 

Directions:

Drain the liquid from the salmon.  In a large bowl, mix salmon, almond flour, egg, onion, and seasonings together.  Heat a frying pan over medium-high heat.  Form the salmon mixture into four evenly sized patties.  Add a couple TBSP of coconut oil to your pan.  Place the patties onto the skillet and fry for about 5 minutes or until they are light brown and crispy.  Flip and do the same on the other side.  (You may need to add more coconut oil to the pan.)  Remove the patties from the burner and serve with dried dill sprinkled on top and a drizzle of balsamic vinegar.  These can be served with a green salad with your favorite homemade dressing or with steamed veggies.
