And, oh, those rich spices that play nice together and give that perfect pumpkin pie taste!  There are minimum carbs and sugar in these little nibbles. Notice you can eliminate the coconut sugar and sweeten these with low-glycemic natural sugar substitutes like xylitol ( which is especially important for diabetics or for those who are eliminating sugar in their diets). Why is pumpkin so healthy for you?   It is gluten-free, high in fiber, minerals and vitamins, but low in carbs and sugar.  It is satisfying, tasty and good for you.

Pumpkin Pie Energy Bites

Pumpkin Pie Energy Bites

Ingredients for the pie:

1 can organic pure pumpkin

2 very ripe bananas

1/3 cup coconut sugar or 1/3 cup xylitol

1 1/2 tsp. cinnamon

1/2 tsp. ginger (zested)

1/8 tsp. nutmeg

1/2 tsp. vanilla extract

 

Ingredients for the whipped topping

1 can full-fat coconut milk (refrigerate in advance)

2 Tbsp. pure maple syrup

1/4 tsp. cinnamon

1/2 tsp. vanilla extract

 

Directions:

Preheat oven to 350 degrees. In a food processor or blender combine all of the pie ingredients. Blend until smooth, scraping down the sides as needed. Spoon the mixture into lined muffin tins. The silicone liners work best as the pie mixture won’t stick. Bake for 20-25 minutes. Let the pies cool completely and then place in the fridge for an hour. The pumpkin pie energy bites will continue to firm up as they sit. To make the whipped topping, open up your can of coconut milk that has been in the fridge overnight. Scoop the fatty white part off and place in a mixing bowl with the maple syrup, vanilla, and cinnamon. Use the whipping attachment and whip the coconut into a cream. Scoop a little on top of each muffin. Enjoy!

Keep these stored in the fridge. I highly recommend making the whipped topping right before eating/serving for optimal freshness. Also, the texture of your pie will vary by banana ripeness and the brand of pumpkin.
