Easy Vegan Pad Thai

I LOVE Pad Thai, it is one of my favorite dishes of all time. This Easy Vegan Pad Thai, is literally so fast that it can be done in less than 15 minutes. My kind of meal!   I was on the search for an easy vegan Pad Thai that could also be served to my non-vegan, unhealthy Thai loving family and friends:  Mission accomplished.

This easy vegan Pad Thai recipe is also so incredibly nutritious.  The sauce is considered RAW, meaning that it hasn’t been heated up past 112 degrees.  Since it is RAW, you don’t lose any of the healthy enzymes that the ingredients have to offer.  Just a few of the super foods in this recipe are the garlic, cilantro, and all the fresh lime juice.  My easy vegan Pad Thai is perfect for perfect meatless Monday’s as well, but if being meatless is not your jam than you can also serve it with chicken or wild caught salmon.  You are really going to enjoy this meal, I promise! 


Easy Vegan Pad Thai

Servings: 4-6


1 large onion chopped

4 cloves of garlic

2 limes juiced

6 TBSP raw almond butter (read your label: look for no sugar or “bad” fats added)

½ cup BRAGGS Liquid Aminos or coconut amino's

2 TBSP honey or maple syrup (you could add 1-2 TBSP of xylitol if you are omitting sugar)

2 tsp red pepper flakes


Optional: a splash of hot sauce

Optional: To add some healthy fat try adding 1 tablespoon of MCT Oil to this recipe.  The benefits of MCT Oil are numerous and it's easy to hide in many healthy recipes.

For the garnish (a handful of each): Chopped green onions, fresh cilantro, and pieces of raw cashews; sprinkle with fresh lime juice



Blend the above ingredients (saving the garnish for the end) in a blender until a smooth consistency is reached.  Pour over kelp noodles, “zoodles,” or rice noodles (depending on what meal plan you are on).  To Complete this masterpiece finish by adding the garnishes.
