The Best Juicy Meatloaf Recipe


2 lb grass-fed ground beef & 2 free-range eggs

½ of green pepper chopped finely

2 medium onions chopped finely

1 ½ cup shredded grass-fed cheese

1 ½ tsp of sea salt

1 tsp of pepper, basil & oregano

2 TBSP parsley

Use 1 tablespoon of coconut oil for the veggies  


Sauté the onions and pepper in the coconut oil, then transfer to a mixing bowl and mix all other ingredients together using your hands.  Gently form into a loaf, put into a baking dish lightly greased with coconut oil and with about 1/3 C water and bake sealed with foil at 350 degrees for approximately for 1 hour to 1 &1/4 hours (uncover the last 15 minutes or so)—Cooking times may vary.   Bake until required doneness.

**Optional- Take some no sugar added ketchup and add 1-2 TBSP of honey. Add a splash of apple cider vinegar, heat on the stovetop and you have a healthy sauce for the topping.
